Glossary: "Number" terms

18/10 and 18/8 stainless steel
This fraction specifies the percentages of chromium and nickel, respectively, in stainless steel alloy. While both metals contribute to the oxidation-resistant character of the alloy, the nickel contributes significantly to the bright, polished luster. Because the quality of the finish of stainless steel is primarily a function of the manufacturing process there is no appreciable difference between 18/10 and 18/8 stainless. Even though this designation has been replaced by other nomenclature throughout the steel industry, some manufacturers continue to use it liberally.
