Glossary: "J" terms

Julienne
A method of slicing food, most frequently vegetables and fruits, into matchstick-like strips, typically 1/8 square and between 1 and 2 long. Usually performed with a knife or a mandoline slicer, julienne slices are often used in in stir-fries, salads, and as a garnish for various dishes.
