Glossary: "F" terms

Fat separator
A kitchen tool resembling a Pyrex measuring cup, and which has a removable cover and a long outlet spout that joins the cup at its bottom. The fat separator is filled with broth or gravy; the fat congeals at the top, allowing the clearer liquid to be poured out the spout from the bottom. Commonly available in sizes of 1 to 4 cups.


Freezer burn
The result of a damaging, drying out, process that occurs in food stored in a freezer, especially noticeable in meats and vegetables. Moisture held within food migrates to the surface and forms ice crystals, drying and shriveling the food.
